How do I password protect my Simplenote data stored on my devices? -- MBP, iPhone, iPad.

On your MBP, if you're using the web app, it will require password authentication if it remains idle for an extended period of time.
For the iPhone and iPad, you'll find a 'passcode' lock option under settings.
